  • This is a really great idea. Have you connected with Stoneyfield Farm? They tried to start this type of "fast food" establishment in the northeast but I'm not sure it really succeeded. One thing to think in mind is buying locally which might be the bigger issue, and could be in conflict with a "national" chain, even organic and veggie. A great, and popular, book on this is The Omnivore's Dilemma which you've likely read. If you haven't, go for it! It's an easy to read, accessible story of food in America and what might be a more important movement than going veggie - supporting local and sustainable farms. ps. I am a vegetarian - but still think going local is even more important than going veggie for our world's sustainability. I can't wait to see how your story goes! ;-)
